Fish & chips with Tartar Sauce

A classic English dish that extends far beyond the island's borders: Fish & Chips. The food blogger Lena Fuchs (@mein_leckeres_leben) kindly refined this traditional recipe for us  - it's worth trying!

Fish&Chips with Tartar Sauce-Lena Fuchs

Ingredients (4 portions:)

  • 750 g cod fillet
  • 150 g flour
  • 25 g cornflour
  • 3 tsp baking powder
  • approx. 250 ml sparkling water or beer
  • 1 pinch of turmeric
  • Salt, pepper from the mill
  • Oil, for frying
  • Lemon and fleur de sel, to serve (optional)

Oven fries

  • 1.2 kg potatoes
  • 1 tbsp olive oil
  • Salt, freshly ground pepper

Tartar Sauce

  • 200 g sour cream
  • 50 g crème fraîche
  • 1 tbsp mayonnaise
  • 4 pickled gherkins
  • 1 tsp capers
  • 1 small apple
  • 1 small red onion
  • 1 tsp Dijon mustard
  • Grated ½ organic lemon
  • ½ bunch of chives
  • Salt, freshly ground pepper

Zubereitung

  1. Preheat the Falcon rangecooker's fan oven to 190 °C.  For the homemade fries, wash the potatoes well and cut into thin sticks, with or without the skin, as desired. Spread them on a baking tray and mix with olive oil. Season well with salt and pepper.
  2. Bake the potatoes in a hot oven for 30-40 minutes until crispy.
  3. Finely chop the pickled gherkins, apple, onion, chives and capers for the tartar sauce. Mix with all the ingredients and season to taste.
  4. Cut the fish into 8-12 bite-sized pieces. Season with salt and pepper.
  5. For the batter, mix the flour with the baking powder, turmeric and sparkling water until smooth.  
  6. Place a large frying pan on the hob and add 2-3 fingers of oil to the pan. Heat the oil over a medium heat. Dip the fish pieces completely in the batter and place in the pan. Fry in the hot oil until golden brown, turning several times until the fish pieces are nice and crispy and golden brown. Drain on kitchen paper and season with a little fleur de sel to taste.
  7. Serve the baked fish with the oven fries and tartar sauce.
  8. Drizzle the fish with fresh lemon juice if desired.
